Despite still being under 30 years of age, Jethro Lawrence has built up a formidable CV prior to him joining the team at The Muset by Ronnie. As well as working at some notable restaurants in Wales, he has worked at the Cowshed on Whiteladies Road as the head chef earning 9/10 twice by Mark Taylor. Jethro’s views on cooking are borne out the seasons and reinforcing flavours at their best. Eclectic in style and playful by nature, he looks at striking a balance between sweetness and acidity, texture and taste. This is a serious head chef’s position for Jethro and he’s here to make a statement.
